Roasted Grape & Brie Crostini with foodies Pure NZ Flaky Sea Salt

Makes: 20–24 crostini           Prep: 5 minutes         Cook: 20–25 minutes

 Sweet roasted grapes, creamy melted brie and honey come together on crisp crostini, finished with foodies Pure NZ Flaky Sea Salt for the perfect sweet-salty crunch.

 Ingredients

  • 600g seedless red grapes

  • 2 Tbsp olive oil, divided

  • foodies Pure NZ Flaky Sea Salt

  • 1 French baguette, thinly sliced diagonally

  • 225g brie, sliced

  • 1–2 Tbsp honey

  • ¼ cup toasted walnuts, roughly chopped

  • 1 tsp fresh rosemary, finely chopped

 Method

  1. Roast the grapes
    Preheat oven to 200°C. Place grapes on a baking tray, drizzle with half the olive oil and season with foodies Pure NZ Flaky Sea Salt. Toss gently and roast for approximately 15 minutes, until the grapes soften and begin to blister.

  2. Prepare the crostini
    Arrange baguette slices on a baking tray and brush lightly with the remaining olive oil. Top each with a slice of brie and bake for 5–7 minutes, until the cheese has melted and the bread is lightly golden.

  3. Assemble
    Spoon the warm roasted grapes over the melted brie. Drizzle lightly with honey and scatter with toasted walnuts and fresh rosemary.

  4. Finish with flaky sea salt
    Just before serving, add a generous pinch of foodies Pure NZ Flaky Sea Salt. The delicate flakes add a clean burst of salt and a satisfying crunch that balances the sweetness of the grapes and honey with the richness of the brie.

 Serve immediately while the crostini are warm and crisp.
